Ingredients

  • Kodiak Cake pancake mix: I found the birthday cake flavor at Walmart. If you can’t find it, you can use the regular variation or use normal pancake mix! Kodiak Cakes is a great source of 100% whole grains.
  • Sugar substitute: This is used to sweeten the mug cake.
  • Cake batter extract: This is key to the mug cake and will help add to the cake flavor. 
  • Milk: I used skim milk. Feel free to use your preferred milk alternative. I have used a coffee creamer before and it worked perfectly!
  • Coconut oil: This will help to add moisture to your mug cake. 
  • Sprinkles: Can’t forget the sprinkles.. These add a nice pop of color!
  • Frosting: I used Betty Crocker buttercream frosting. No cake is complete without frosting, but you may leave it off if you prefer.

How to Make Birthday Cake Mug Cake

  1. Spray a mug with cooking spray. Measure and add the dry ingredients directly into the mug.
  2. Add the milk and cake batter extract to the dry ingredients.
  3. Stir together until smooth with no more lumps, ensuring the dry ingredients are all combined.
  4. Add the sprinkles to the cup and mix together briefly. 
  5. Place the mug in the microwave and cook for about 50 seconds until the cake is set. Let rest before serving. If desired, dollop or spread frosting on top and enjoy!

Swaps or Alternatives

If you can’t find the Kodiak Cakes birthday cake flavor, you can use their regular flavor or use normal pancake mix. 

Having a dairy allergy or prefer to avoid it? Use your preferred milk alternative in place of the milk. If you opt for a sweetened milk alternative, you may need to adjust the sugar substitute amount to prevent making an overly sweet cake. 

If you do not have coconut oil on hand or have an allergy, regular oil will also work in this cake.

Avoid over mixing the batter to ensure your mug cake turns out fluffy! Overmixing messes with the gluten development in your batter, which, in a nutshell, can make your mug cake unnecessarily tough. 

To prevent your mug cake from coming out tough, do not overcook it in the microwave! Cook times may vary depending on your microwave settings. Also, the mug you choose matters- a wider mug will cook faster than taller mugs.

What are some other substitutions or additions I could try?

This recipe is pretty basic and can allow for so many changes! If you want to experiment with swapping out the cake batter extract, try other variations such as almond, lemon, peppermint, or maple! 

As for toppings or mix-ins, go for themed sprinkles such as black and orange for Halloween! You can change the frosting flavor or even drizzle with peanut butter instead. Topping your mug cake with berries, bananas, crumbled Oreos, or even mini chocolate chips would make a delicious variation as well!
