3 Reasons Why You'll Love This Macro-Friendly Avocado Banana Chocolate Pudding Protein Recipe

  1. It’s so satisfying! This pudding has a great balance of macros–monounsaturated fats from avocados, protein from protein powder, and carbohydrates from the banana. It’s also packed with vitamins and minerals. I promise you’ll love this nutrient-dense recipe!
  2. It’s quick. This doesn’t require a lot of time, equipment or ingredients. It’s good to make ahead of time and store in the fridge, or even portion out for the week.
  3. It’s hassle-free. Throw everything in the blender and mix. So simple!

Ingredients

  • 2 ripe avocados
  • ½ ripe banana

  1. Cut each avocado in half and scoop out the flesh with a spoon. Add to blender.
  2. Cut 1 medium-sized banana in half. Peel one half and add to blender.
  3. Add 1 cup of coconut milk to the blender. Blend until smooth
  4. Add remaining ingredients (protein powder, vanilla, just a pinch of salt, honey, dark chocolate chips, cocoa powder, and sweetener) to blender. Blend until smooth.

  6. Chill for a few hours until cool. Store in an air-tight container for up to 1 week. Enjoy!

Swaps or Alternatives

  1. Use lite coconut milk or vanilla almond milk for a low-fat version of this recipe! The fat content of this recipe can be somewhat misleading because avocados are a great source of monounsaturated (healthy) fats!
  2. Skip the banana if you don’t like it, or don’t have it!
  3. Use maple syrup instead of honey if you prefer the flavor of maple, or don’t have honey on hand.
  4. Vanilla protein powder works, too! It will balance out the flavor and taste a bit less chocolatey, but will still be delicious. You can also try peanut butter-chocolate protein powder–peanut butter goes well with chocolate and banana!

Quick Tip(s)

  • If you have an immersion blender, it will work well for this recipe! Mix ingredients in a cup with a hand blender so that you don’t have to clean your large blender when in a rush
  • Plan when you are going to make this recipe so that you can purchase your avocados accordingly. If you plan to make in within 1-2 days of purchasing, make sure to choose very ripe avocados (they will be darker in color and soft but not mushy to the touch). If you plan to wait more than 3 days, plan to buy firmer avocados that have a greener skin.
