Macro Friendly Copycat Chick-Fil-A Cobb Salad

Chick-Fil-A is one of the most popular fast-food restaurants these days, and for good reason – the food is amazing! The Cobb Salad is extremely popular and one of my personal favorites, so I made my own at-home Copycat Chick-Fil-A Cobb Salad so that we can enjoy this filling, flavorful salad anytime. Plus, it’s got fewer calories and more protein than the original making this copycat version a big win!

Equipment

  • 1 Paring knife
  • 1 Air fryer
  • 1 small skillet

Ingredients
  

  • 2 breaded chicken breast strips (about 85g), chopped (I used Just Bare Chicken Strips)
  • 1 piece turkey bacon, cooked and chopped
  • cups field greens salad mix
  • ¼ cup roasted corn (I used Fire Roasted Frozen Corn from Birds Eye, but a can of corn or corn off the cob will work)
  • 1 large hard-boiled egg, sliced
  • ¼ cup shredded cheese (I used a Monterey Jack & cheddar cheese blend)
  • 2 tbsp Avocado Green Goddess Dressing (I used Simply Marzetti but Bolthouse has a great option, too)

Instructions
 

  • Airfry chicken according to package directions. Cook bacon in a small skillet over medium-high heat until well browned. Set aside to cool.
  • In a large salad bowl, add your field greens.
  • Chop chicken strips, slice your egg, and crumble bacon once it’s cooled. Add to top of greens.
  • Sprinkle on cheese, corn, and dressing.
  • Mix everything together and enjoy!

Notes

If you can’t find the bag of frozen roasted corn that I used, feel free to use canned corn! To roast it, simply toss it into a small skillet over medium heat for a few minutes to get that nice little char.
Feel free to add in some additional veggies to ramp up your veggie intake!
To save some calories and up the protein even more, feel free to swap the crispy chicken with grilled chicken.
