Why I Made This Recipe

I get it—Brussels sprouts get a bad rap. But if you’ve only ever had them steamed and mushy, you’re missing out! When roasted just right, they turn into crispy, flavor-packed bites that are absolutely addictive. I wanted a simple, foolproof way to make Brussels sprouts taste amazing while keeping them light, macro-friendly, and effortless to throw together.

3 Reasons Why You'll Love This Recipe

  1. Crispy, not mushy – Roasting brings out a deep, rich flavor with crispy edges that make these sprouts downright irresistible.
  2. A touch of natural sweetness – A drizzle of sugar-free maple syrup takes this dish to the next level, giving it a hint of caramelized goodness.
  3. Light and nutritious – At just 59 calories per serving, this side dish adds fiber and nutrients without making a dent in your macros.

Equipment

  • 1 Large baking sheet
  • 1 Mixing bowl
  • 1 measuring spoons
  • 1 Knife and cutting board

Ingredients

  • 1 lb Brussels sprouts, halved
  • 1 tbsp Olive oil
  • 2 cloves Garlic, minced
  • 1 tbsp Sugar-free maple syrup
  • 1/2 tsp Salt

Instructions

  • Preheat your oven to 425°F.
  • Wash and trim the Brussels sprouts, removing any browned outer leaves. Cut them in half.
  • In a large mixing bowl, combine the halved Brussels sprouts, minced garlic, and oil. Toss them together to coat the sprouts evenly with the oil and garlic.
  • Spread the Brussels sprouts in a single layer on a baking sheet. Make sure they are evenly spaced for even roasting.
  • Roast in the preheated oven for about 20-25 minutes, or until the sprouts are tender and browned. You may want to stir or shake the pan occasionally for even cooking.
  • Drizzle the maple syrup over the roasted Brussels sprouts and toss them to coat evenly.
  • Return the Brussels sprouts to the oven for an additional 5-7 minutes to allow the maple syrup to caramelize slightly.
  • Once they are tender and slightly caramelized, remove the Brussels sprouts from the oven.
  • Serve hot and enjoy your delicious roasted Brussels sprouts!
