How to Make Protein Cheesecake Bites

  1. Step one: Add all ingredients to a large mixing bowl and mix to combine.
  2. Step two: Roll into 16 bite-size balls.
  3. Step three: Store in an airtight container in the refrigerator or freezer. That’s it!

Swaps or Alternatives

  • Vanilla protein powder
    • This is the main ingredient for protein, so I do not recommend omitting this ingredient. However, there are a ton of options when it comes to protein powders! You can use whatever brand you prefer. In this recipe, I used Four Sigmatic, which is a plant-based protein powder. Whey, casein, and egg white protein powder are examples of other protein powders that would work just fine too. We highly recommend Clean Simple Eats (code TAMI) or 1st Phorm Level-1 protein powders as well. 
  • Coconut flour
    • This recipe calls for coconut flour, but feel free to experiment with any flour of your liking. Almond flour is usually a great alternative for anyone with a coconut allergy.
  • Cream cheese
    • The main ingredient that helps to give this recipe a cheesecake flavor. If you are following a dairy-free or vegan diet, you can simply swap this with a plant-based or vegan cream cheese.
  • Lemon
    • This ingredient helps bring another burst of flavor to these bites, but it also helps the mixture “stick”. If you don’t have a lemon on hand, you can simply use additional almond milk or water to help balance the dry and wet ingredients.
  • Almond milk
    • Almond milk is what we used to help bring a bit more liquid into the mixture, but any liquid would do just fine. Milk or water works just fine!
  • Freeze-dried strawberries
    • Although this is an optional ingredient, we highly recommend it! It helps to bring a hint of color, flavor, and crunch to these amazing bites!

Quick Tip(s)

  • Don’t forget to soften your cream cheese in advance! If you are using it right out of the refrigerator it will be hard to mix in and will leave you with a different texture of energy bite. To soften cream cheese quickly, simply remove from the packaging, place on a plate, and microwave for 10-15 seconds.
  • This recipe is really easy to double, triple, or quadruple. If you’re looking to meal prep a large amount of these, I highly recommend adjusting the portions. You can keep the extras in the freezer for up to 6 months!

Equipment

  • 1 Wooden spoon

Ingredients
  

  • ½ cup vanilla protein powder
  • ½ cup coconut flour
  • 4 oz cream cheese
  • Juice from 1 lemon
  • ¼-½ cup almond milk (or water)
  • ¼ cup dried strawberries (optional)

Instructions
 

  • Add all ingredients to a large mixing bowl. Using a wooden spoon and/or hands, stir to combine. Note: start with ¼ cup almond milk (or water).
  • Take approximately 1 tbsp of the mixture and roll in hands. If the mixture is too dry, add more almond milk or water. If the mixture is too sticky to roll, place in the refrigerator for 5-10 minutes.
  • Roll approximately into 16 balls.
  • Store in an airtight container in the refrigerator or freezer.
