  • 1.5 cups Peanut butter
  • 1/2 cup Sugar-free maple syrup
  • Pinch salt
  • 4 cups Rice Crispy cereal
  • 3/4 cup Semi-sweet chocolate chips
  • 1/4 cup Butterscotch chips
  • 2 tbsp. Coconut oil

Instructions

  • In a big microwave-safe bowl, melt peanut butter and sugar-free maple syrup. Sprinkle in a pinch of salt and stir until smooth.
  • Add the cereal and mix until they're all coated.
  • Line a baking pan with parchment paper.
  • Put the peanut butter mix into the pan and press it down to make a solid layer.
  • In another bowl, melt the chocolate chips, butterscotch chips, and coconut oil. Stir until smooth.
  • Pour the melted chocolate mix over the peanut butter layer and spread it out evenly.
  • Put the pan in the fridge for 2-3 hours until everything is set.
  • Once it's firm, lift it out of the pan using the parchment paper. Cut it into bars or squares.
  • Serve and enjoy these delicious Peanut Butter Chocolate Crispy Bars!

Notes

Experiment with different chocolate flavors by using dark chocolate or white chocolate chips instead of semi-sweet.
Keep the bars refrigerated in an airtight container for up to a week. They can also be frozen for longer storage.
If the bars are too firm from the fridge, let them sit at room temperature for a few minutes before serving for a softer texture.
