Grilled Street Corn
Equipment
- 1 Grill
- 1 Basting brush
- 1 Small bowl
- 1 Tongs
- 1 Serving plate
Ingredients
- 4 ears of corn
- 2 tbsp light sour cream
- 2 tbsp Cotija cheese, crumbled
- ¼ tsp fine sea salt
- 2 tbsp cilantro, finely chopped
- ½ tsp chipotle chili powder
- ½ tsp garlic powder
- 1 lime
Instructions
- Preheat your grill to medium-high heat. Remove any excess silk from the corn and rinse them under cold water. Pat them dry with a paper towel.
- In a small bowl, mix together the light sour cream, chipotle chili powder, garlic powder, and a squeeze of lime juice. Stir until well combined. Set aside.
- Place the cleaned and dried ears of corn directly on the preheated grill. Grill the corn for about 10-12 minutes, turning occasionally to ensure even cooking. The corn should have a nice char and be tender.
- Once the corn is grilled to your liking, remove them from the grill and place them on a serving plate. Brush each ear of corn with the chipotle lime spread, making sure to coat each side evenly.
- Sprinkle crumbled Cotija cheese over the corn while the chipotle lime spread is still wet. Then, sprinkle with fine sea salt.
- Sprinkle the chopped cilantro over the corn, and serve with lime wedges on the side. Enjoy!
