  • 1 Grill
  • 1 Basting brush
  • 1 Small bowl
  • 1 Tongs
  • 1 Serving plate


  • 4 ears of corn
  • 2 tbsp light sour cream
  • 2 tbsp Cotija cheese, crumbled
  • ¼ tsp fine sea salt
  • 2 tbsp cilantro, finely chopped
  • ½ tsp chipotle chili powder
  • ½ tsp garlic powder
  • 1 lime


  • Preheat your grill to medium-high heat. Remove any excess silk from the corn and rinse them under cold water. Pat them dry with a paper towel.
  • In a small bowl, mix together the light sour cream, chipotle chili powder, garlic powder, and a squeeze of lime juice. Stir until well combined. Set aside.
  • Place the cleaned and dried ears of corn directly on the preheated grill. Grill the corn for about 10-12 minutes, turning occasionally to ensure even cooking. The corn should have a nice char and be tender.
  • Once the corn is grilled to your liking, remove them from the grill and place them on a serving plate. Brush each ear of corn with the chipotle lime spread, making sure to coat each side evenly.
  • Sprinkle crumbled Cotija cheese over the corn while the chipotle lime spread is still wet. Then, sprinkle with fine sea salt.
  • Sprinkle the chopped cilantro over the corn, and serve with lime wedges on the side. Enjoy!
