Our Macro-Friendly Black Bean Corn Salsa is the perfect compliment to any party, gathering, BBQ, or get-together! This dish is packed with nutrients, full of flavor, and will be enjoyed by all – even the self-proclaimed non-bean people.
I make this dish every summer when we have a cookout to attend or are having friends over to the house to swim. Instead of grabbing a jar of salsa, I'll whip this up and everyone is always impressed. For the ten minutes it'll take you to throw this together, it's well worth the effort!

Black Bean Corn Salsa
Equipment
- Mixing bowl
- Cutting Board

- Measuring cups and spoons
- Mixing Spoon or Spatula
- Serving bowl or platter
Ingredients
- 1 10 oz. can diced tomatoes, drained
- 1 15.2 oz. can whole kernel corn, drained
- 1 15 oz. can black beans, rinsed and drained
- ½ cup red onion, diced
- ½ cup red bell pepper, diced
- ¼ cup fresh cilantro, chopped
- 1 tsp garlic, minced
- ½ tsp salt
- ½ tsp ground cumin
- ½ tsp chili powder
- 2 tbsp lime juice
Instructions
- In a mixing bowl, combine the drained diced tomatoes, drained whole kernel corn, rinsed and drained black beans, diced red onion, diced red bell pepper, chopped fresh cilantro, minced garlic, salt, ground cumin, chili powder, and lime juice.
- Gently stir all the ingredients together until they are well combined. Make sure all the flavors are evenly distributed.
- Taste the salsa and adjust the seasoning if needed. You can add more salt, lime juice, or spices according to your preference.
- Once the flavors are well balanced, cover the bowl and refrigerate the salsa for at least 30 minutes to allow the flavors to meld together. This resting time will enhance the taste.
- When you're ready to serve, give the salsa a quick stir. Transfer it to a serving bowl or platter, and garnish with additional chopped cilantro, if desired. Enjoy!
