Easy Herb Roasted Carrots

Ingredients
- Olive oil spray
- 2 lbs. Carrots, cut into 1/2-inch pieces
- 2 tbsp. Extra-virgin olive oil
- 1 tbsp. Fresh thyme, minced
- 1/4 cup Fresh Italian parsley, chopped
- 3 cloves Garlic, minced
- 2 tsp. Salt
- Ground black pepper, to taste
Instructions
- Preheat your oven to 400°F.
- Line a baking sheet with parchment paper or lightly coat it with olive oil spray to prevent sticking.
- Wash and peel the carrots if desired. Cut them into 1/2-inch pieces, ensuring they are uniform for even cooking.
- In a large bowl, combine the carrot pieces with extra-virgin olive oil, minced thyme, chopped Italian parsley, and minced garlic. Toss everything together until the carrots are well coated with the oil and herbs.
- Sprinkle salt over the carrots and add ground black pepper to taste. Toss again to ensure even seasoning.
- Spread the seasoned carrots in a single layer on the prepared baking sheet. Make sure not to overcrowd them to allow for proper roasting.
