Ingredients
  

  • Olive oil spray
  • 2 lbs. Carrots, cut into 1/2-inch pieces
  • 2 tbsp. Extra-virgin olive oil
  • 1 tbsp. Fresh thyme, minced
  • 1/4 cup Fresh Italian parsley, chopped
  • 3 cloves Garlic, minced
  • 2 tsp. Salt
  • Ground black pepper, to taste

Instructions
 

  • Preheat your oven to 400°F.
  • Line a baking sheet with parchment paper or lightly coat it with olive oil spray to prevent sticking.
  • Wash and peel the carrots if desired. Cut them into 1/2-inch pieces, ensuring they are uniform for even cooking.
  • In a large bowl, combine the carrot pieces with extra-virgin olive oil, minced thyme, chopped Italian parsley, and minced garlic. Toss everything together until the carrots are well coated with the oil and herbs.
  • Sprinkle salt over the carrots and add ground black pepper to taste. Toss again to ensure even seasoning.
  • Spread the seasoned carrots in a single layer on the prepared baking sheet. Make sure not to overcrowd them to allow for proper roasting.
  • Place the baking sheet in the preheated oven and roast the carrots for 25-30 minutes or until they are tender and golden brown. You may want to toss the carrots halfway through the cooking time for even caramelization.
