I was listening to a podcast the other morning that was talking about the rising costs of everything, including things like fast food – and the numbers were astonishing! Just more of a reason to skip the fast food drive-through and make your own healthier, more budget-friendly meals at home.

Macro Friendly McChicken Sandwich

- Large bowl
- Shallow bowl
- Food processor or medium plastic bag
- Air fryer
Ingredients
Chicken patty
- 1 lb. ground chicken
- 1 tbsp yellow mustard
- 1 tsp salt
- 1 tsp pepper
- 1 tsp garlic powder
- 1 tsp onion powder
Breading mixture
- 1½ cup cornflakes
- ½ tsp paprika
- ½ tsp garlic powder
- ½ tsp onion powder
Other
- 4 burger buns, brioche
- 4 tbsp light mayo
- ½ cup shredded lettuce
Instructions
- In a large mixing bowl, combine the ground chicken, yellow mustard, garlic powder, onion powder, salt, pepper, and paprika. Use your hands or a fork to gently mix the ingredients until well combined. Be careful not to overmix, as it can result in a dense texture.
- Divide the chicken mixture into 4 even balls. Set aside.
- Crush the corn flakes in a plastic bag or using a food processor, along with the paprika, garlic powder, and onion powder, until they resemble coarse breadcrumbs. Place the crushed mixture in a shallow dish.
- Press the chicken patty into the crushed corn flakes, coating both sides evenly. Repeat this process for the remaining chicken mixture to make additional patties.
- Place the coated chicken patties in a single layer in the air fryer, leaving space between each patty for proper air circulation.
- Cook the chicken patties in the air fryer for approximately 10-12 minutes. The exact cooking time may vary depending on the size and thickness of the patties, as well as the specific model of your air fryer. Ensure that the internal temperature of the chicken reaches 165°F (74°C) for safe consumption.
- While the chicken patties are cooking, prepare the burger buns. Spread a layer of light mayo on the top half of each bun.
- Place a cooked chicken patty on bottom buns, followed by a generous amount of shredded lettuce.
- Serve the protein-packed copycat McChicken sandwiches immediately, and enjoy!
