“FHM Buffalo Chicken Mac and Cheese”

High Protein Buffalo Chicken Mac and Cheese

- 1 Mixing bowl
- 1 Mixing spoon
- 1 whisk
- 1 Knife and cutting board

Ingredients
- 1 lb. Chicken breast, boneless, skinless Cut into chunks
- 1/2 tsp Onion powder
- 1/2 tsp Parsely
- 1/2 tsp. Garlic powder
- 1/2 tsp. Salt
- 1/4 tsp. Ground pepper
- 1 tbsp. Olive oil
- 1 1/2 cups Chicken broth
- 1 1/2 cups Milk of choice
- 1 1/2 cups Elbow noodles
- 1/4 cup Mild Buffalo sauce
- 2 cups Shredded reduced-fat cheddar cheese Divided
Instructions
- Cut the chicken into small cubes and place them in a mixing bowl. Add onion powder, garlic powder, parsley, salt, and pepper to the bowl. Use a spoon to mix well, ensuring that all the chicken pieces are evenly coated.
- Heat oil in a large skillet over medium-high heat. Add the chicken cubes in a single layer and cook until they turn a nice golden brown, which should take about 5 minutes.
- Reduce the heat to low and carefully pour in the chicken broth and milk. Allow the mixture to simmer until you start to see bubbles forming.
- Once the mixture begins to bubble, add the noodles to the skillet. Let everything simmer together until the noodles become tender, which should take approximately 10-12 minutes.
- When the noodles are tender, stir in the buffalo sauce and 1 cup of cheese. Continue stirring until the sauce becomes thick, creamy, and cheesy.
- Serve the mac and cheese in your desired serving bowls. While it's still hot, top it with the remaining cheese. Enjoy!
