Ingredients
  

  • 1 lb. Chicken breast, boneless, skinless Cut into chunks
  • 1/2 tsp Onion powder
  • 1/2 tsp Parsely
  • 1/2 tsp. Garlic powder
  • 1/2 tsp. Salt
  • 1/4 tsp. Ground pepper
  • 1 tbsp. Olive oil
  • 1 1/2 cups Chicken broth
  • 1 1/2 cups Milk of choice
  • 1 1/2 cups Elbow noodles
  • 1/4 cup Mild Buffalo sauce
  • 2 cups Shredded reduced-fat cheddar cheese Divided

Instructions
 

  • Cut the chicken into small cubes and place them in a mixing bowl. Add onion powder, garlic powder, parsley, salt, and pepper to the bowl. Use a spoon to mix well, ensuring that all the chicken pieces are evenly coated.
  • Heat oil in a large skillet over medium-high heat. Add the chicken cubes in a single layer and cook until they turn a nice golden brown, which should take about 5 minutes.
  • Reduce the heat to low and carefully pour in the chicken broth and milk. Allow the mixture to simmer until you start to see bubbles forming.
  • Once the mixture begins to bubble, add the noodles to the skillet. Let everything simmer together until the noodles become tender, which should take approximately 10-12 minutes.
  • When the noodles are tender, stir in the buffalo sauce and 1 cup of cheese. Continue stirring until the sauce becomes thick, creamy, and cheesy.
  • Serve the mac and cheese in your desired serving bowls. While it's still hot, top it with the remaining cheese. Enjoy!

Notes

You can adjust the level of spiciness by using more or less buffalo sauce, depending on your preference.
If you're not a fan of cheddar cheese, you can experiment with other cheese varieties like mozzarella or gouda.
To make this dish a complete meal, you can serve it with a side of fresh salad or steamed vegetables.
