Healthy Beef and Broccoli Stir Fry
Beef and broccoli is a classic Asian dish. We put a macro-friendly twist on it, bringing you our Healthy Ground Beef and Broccoli Stir Fry. This flavorful dish is high in protein and contains a balance of carbs and fats to ensure you're not only hitting your macros, but are enjoying every second of it!
Equipment
- 2 small bowls
- 2 Whisks
- 1 Mixing spoon
Ingredients
- 2 tbsp. Olive oil
- 1 lb. Lean ground beef We used 97/3
- 1 Yellow onion, chopped
- 1/2 tsp. Black pepper
- 3 Cloves garlic, minced
- 3 Cups Broccoli florets
- 1 Red bell pepper, sliced
- 1 Yellow bell pepper, sliced
- 2 tbsp. Corn starch
- 2 tbsp. Water
- 1 cup Beef bone broth
- 1/4 cup Low-sodium soy sauce
- 2 tbsp. Honey
- 1/2 tsp. Ground ginger
- 1 tsp. Toasted sesame oil
- For serving (optional): cooked rice of choice (brown, white, jasmine, or cauliflower), sesame seeds, sliced green onions
Instructions
- Combine 1 tbsp cornstarch and water in a small mason jar or small bowl. Shake or whisk to combine. Set aside.
- Combine remaining sauce ingredients (beef broth, soy sauce, honey, ginger, and sesame oil) in a small bowl. Whisk to combine. Set aside.
- Add 1 tbsp olive oil to a large skillet over medium heat. Add ground beef and cook until no longer pink, about 7-8 minutes. Drain excess liquid and return to heat.
- Add bell peppers and broccoli to skillet. Saute, until bell peppers and broccoli are slightly softened, but still crisp, approximately 5-7 minutes. Remove beef and veggies from pan onto a plate and set aside.
- Add sauce mixture to the skillet and bring to a boil. Let it simmer for 2-3 minutes. Shake or whisk the cornstarch mixture and slowly stir it into the sauce. Continue to let simmer until the mixture has slightly thickened. Add 1 more tbsp of cornstarch if sauce is too thin. Whisk to combine. Reduce the heat to low.
- Re-introduce beef and veggies to the skillet, stir to combine. Saute until everything is heated through, approximately 3-5 minutes.
- Serve over rice of choice and garnish with sesame seeds and green onions. Enjoy!
