Equipment

Ingredients
  

  • 2 tbsp. Olive oil
  • 1 lb. Lean ground beef We used 97/3
  • 1 Yellow onion, chopped
  • 1/2 tsp. Black pepper
  • 3 Cloves garlic, minced
  • 3 Cups Broccoli florets
  • 1 Red bell pepper, sliced
  • 1 Yellow bell pepper, sliced
  • 2 tbsp. Corn starch
  • 2 tbsp. Water
  • 1 cup Beef bone broth
  • 1/4 cup Low-sodium soy sauce
  • 2 tbsp. Honey
  • 1/2 tsp. Ground ginger
  • 1 tsp. Toasted sesame oil
  • For serving (optional): cooked rice of choice (brown, white, jasmine, or cauliflower), sesame seeds, sliced green onions

Instructions
 

  • Combine 1 tbsp cornstarch and water in a small mason jar or small bowl. Shake or whisk to combine. Set aside.
  • Combine remaining sauce ingredients (beef broth, soy sauce, honey, ginger, and sesame oil) in a small bowl. Whisk to combine. Set aside.
  • Add 1 tbsp olive oil to a large skillet over medium heat. Add ground beef and cook until no longer pink, about 7-8 minutes. Drain excess liquid and return to heat.
  • Add bell peppers and broccoli to skillet. Saute, until bell peppers and broccoli are slightly softened, but still crisp, approximately 5-7 minutes. Remove beef and veggies from pan onto a plate and set aside.
  • Add sauce mixture to the skillet and bring to a boil. Let it simmer for 2-3 minutes. Shake or whisk the cornstarch mixture and slowly stir it into the sauce. Continue to let simmer until the mixture has slightly thickened. Add 1 more tbsp of cornstarch if sauce is too thin. Whisk to combine. Reduce the heat to low.
  • Re-introduce beef and veggies to the skillet, stir to combine. Saute until everything is heated through, approximately 3-5 minutes.
  • Serve over rice of choice and garnish with sesame seeds and green onions. Enjoy!
