  • 1 Slow cooker
  • 1 Cutting Board
  • 1 Knife
  • 1 immersion blender
  • 1 Soup ladle


  • 5 Carrots Diced
  • 5 Celery Stalks Diced
  • 1/2 Cauliflower head Diced
  • 1 Packet Ranch seasoning mix
  • 32 oz. Low-sodium chicken broth
  • 1/3 cup buffalo sauce (I use Frank’s)
  • 1.5 lbs. Raw chicken breast
  • 8 oz. Reduced fat cream cheese Cut into chunks

Optional toppings:

  • shredded colby jack cheese, diced green onions, sour cream


  • In a large crockpot or slow cooker, add carrots, celery,
    cauliflower, ranch seasoning, chicken broth, buffalo sauce,
    and reduced-fat cream cheese
  • Give the ingredients a stir until combined. Add chicken
  • Allow to cook on low for 4 hours.
  • Carefully remove chicken breasts and shred using a fork or
    hand mixer.
  • While the chicken is out of the crockpot, use an immersion
    blender to combine and breakdown the softened veggies.
    Blend until creamy.
  • Place chicken back into crockpot and allow to cook for an
    additional 4 hours on low.
  • Serve hot with toppings of your choice, enjoy!


Serving size = 1/6 recipe
