Who doesn’t love a healthier, homemade version of a fast-food favorite? This macro-friendly Mexican Pizza has all the flavors of the original, but with more protein, fewer calories, and customizable toppings to make it your own.

I love a good Taco Bell Mexican Pizza, but I don’t love how it derails my macros every time I grab one. So, I created this lighter, protein-packed version that satisfies those cravings without all the extra calories. With 26g of protein per pizza, this is a game-changer for Taco Tuesday!

Copycat Taco Bell Mexican Pizza (Macro-Friendly!)

Equipment

  • 1 baking sheet
  • 1 Microwave-safe bowl
  • 1 Fork
  • 1 Mixing bowl

Ingredients
  

  • 1/2 lb Lean ground turkey
  • 1/2 packet Taco seasoning (1-2 tbsp)
  • 1/3 cup Water
  • Cooking spray
  • 8 6" Mission Carb Balance flour tortillas, taco size
  • 1/2 cup Fat-free refried beans
  • 1/2 cup Red enchilada sauce
  • 1/3 cup Salsa
  • 1/4 cup Reduced-fat shredded Mexican cheese blend

Instructions
 

  • To prepare Mexican pizza, start by preheating your oven to 350º F. Apply spray oil to both sides of the tortillas, sprinkle them with salt, prick them with a fork, and arrange them on a baking sheet. Bake for 10 minutes, then flip them over and continue baking until golden brown, approximately 3-5 more minutes. Remove from the oven and let them cool.
  • Next, increase the oven heat to 400° F. Combine enchilada sauce and salsa in a bowl, then set it aside. In a large skillet, cook and crumble the ground turkey until browned. Sprinkle taco seasoning over the meat, add water, and stir. Bring to a boil, then reduce heat and simmer until thickened.
  • Meanwhile, warm the refried beans in a microwave-safe bowl for easier spreading. Spread a generous layer of refried beans onto each tortilla, followed by the seasoned ground turkey. Place another tortilla on top. Spread about two tablespoons of the enchilada sauce mixture on each pizza, then sprinkle shredded cheese on top. Repeat with the remaining tortillas.
  • Arrange the pizzas on a large nonstick baking sheet and bake for 8-10 minutes, or until the cheese is melted. Serve with your preferred toppings. Enjoy!

Notes

Customize your Mexican pizza with toppings like diced tomatoes, sliced jalapeños, diced onions, or chopped cilantro.
For a vegetarian option, substitute the ground turkey with plant-based crumbles or grilled vegetables.
Adjust the level of spice by choosing mild or hot salsa and adjusting the amount of taco seasoning to your preference.
