Strawberry Yogurt Snack Cake
Equipment
- 1 9×5 loaf pan
- 2 small mixing bowls
- 3 Whisks or mixing spoons
- 1 Large mixing bowl
Ingredients
- 1 cup Kodiak Cakes Power Cakes Mix
- 1/2 cup Vanilla protein powder
- 1 tsp Baking powder
- 1/4 tsp Salt
- 1/4 cup Granulated sugar replacement
- 1 cup Strawberry nonfat Greek yogurt
- 2 large Eggs
- 1 tsp Vanilla extract
- 1/4 cup Melted coconut oil
For the glaze:
- 1/4 cup Powdered sugar replacement
- 2 tbsp Water
Instructions
- Preheat the oven to 350 F.
- Grase a 9×5 inch loaf pan, set aside.
- In a small mixing bowl, whisk together the Kodiak Cakes mix, vanilla protein powder, baking powder, and salt.
- In a large mixing bowl, combine the yogurt, sugar, eggs, and vanilla until combined. Gently whisk the melted oil in.
- Stir the dry ingredients into the wet ingredients, mixing gently until fully combined.
- Pour the batter into the prepared loaf pan and bake for 20-30 minutes, or until the center is set and a toothpick comes out clean.
- Let the cake cool in the pan for 10 minutes, then remove from pan and cool completely on a cooling rack.
- When the cake is cooled completely, make the optional glaze by mixing the powdered sugar and water together.
- Drizzle the glaze over the cake, allowing to set for 15 minutes before slicing and eating. Enjoy!
