Equipment

  • 1 9×5 loaf pan
  • 2 small mixing bowls
  • 3 Whisks or mixing spoons
  • 1 Large mixing bowl

Ingredients
  

  • 1 cup Kodiak Cakes Power Cakes Mix
  • 1/2 cup Vanilla protein powder
  • 1 tsp Baking powder
  • 1/4 tsp Salt
  • 1/4 cup Granulated sugar replacement
  • 1 cup Strawberry nonfat Greek yogurt
  • 2 large Eggs
  • 1 tsp Vanilla extract
  • 1/4 cup Melted coconut oil

For the glaze:

  • 1/4 cup Powdered sugar replacement
  • 2 tbsp Water

Instructions
 

  • Preheat the oven to 350 F.
  • Grase a 9×5 inch loaf pan, set aside.
  • In a small mixing bowl, whisk together the Kodiak Cakes mix, vanilla protein powder, baking powder, and salt.
  • In a large mixing bowl, combine the yogurt, sugar, eggs, and vanilla until combined. Gently whisk the melted oil in.
  • Stir the dry ingredients into the wet ingredients, mixing gently until fully combined.
  • Pour the batter into the prepared loaf pan and bake for 20-30 minutes, or until the center is set and a toothpick comes out clean.
  • Let the cake cool in the pan for 10 minutes, then remove from pan and cool completely on a cooling rack.
  • When the cake is cooled completely, make the optional glaze by mixing the powdered sugar and water together.
  • Drizzle the glaze over the cake, allowing to set for 15 minutes before slicing and eating. Enjoy!
