  1. Roughly chop the salmon fillets into small chunks and place them in a food processor. Pulse until coarsely ground but not a paste (you want some texture).

  2. Transfer the ground salmon to a large mixing bowl. Add the breadcrumbs, red onion, parsley, Dijon mustard, Greek yogurt, beaten egg white, lemon juice, lemon zest, garlic powder, salt, and pepper. Mix until just combined.

  3. Form the mixture into 4 patties, about 1/2-inch thick. Place the patties on a plate and refrigerate for at least 10 minutes to help them firm up.

  4. Heat the olive oil in a large skillet over medium heat. Once hot, add the salmon patties and cook for 4-5 minutes on each side, or until golden brown and cooked through.

  5. Serve the salmon burgers on a whole grain bun or lettuce wrap with your favorite toppings, like sliced avocado, lettuce, tomato, and a dollop of tzatziki or Greek yogurt sauce.
