Cottage Cheese Tortilla Pizza
Equipment
- 1 baking sheet
- 1 Measuring cups and spoons
- 1 Small Mixing Bowl
Ingredients
- 1 Low-carb tortillas I used Mission Carb Balance
- 1/2 cup Low-fat cottage cheese I used Good Culture
- 1/2 cup pizza or marinara sauce
- 16 Turkey pepperonis
- 1/4 cup shredded mozzarella cheese
- Italian seasoning to taste
- red pepper flakes to taste
Instructions
- Preheat oven to 375 degrees
- Lay flatbread on baking sheet
- Mix cottage cheese, sauce, and seasonings together in a small bowl
- Spread across the top of the flatbread.
- Top with cheese & turkey pepperoni.
- Place in preheated oven for 5-7 minutes or until cheese is melted and edges are brown.
- Enjoy!

Is there a trick to not having the tortilla soggy? I love the flavor (& the macros), but I’ve tried this twice now, and the tortilla is so soggy. 🙁
