Here in Florida, we pretty much grill year-round, but it's still a special time when summer rolls around. BBQs and get-togethers become more frequent and I am always looking for easy recipes to impress guests while also limiting my time spent in the kitchen. If you're looking for an easy grilled chicken recipe that comes out perfectly every time, this is it!

  • Grill (gas or charcoal)
  • Mixing bowl
  • Whisk or fork (for mixing the marinade)
  • Tongs or spatula (for flipping the chicken on the grill)
  • Measuring cups and spoons
  • Large Ziploc bag (for marinating the chicken)
  • Knife (for trimming the chicken, if needed)
  • Cutting board (for preparing the chicken or slicing it after grilling)
  • Serving platter or plate (for presenting the grilled chicken)


  • 2 lbs. boneless chicken breast
  • ¼ cup olive oil
  • 2 tbsp lime juice
  • 1 tbsp chili powder
  • 1 tsp garlic powder
  • ½ tsp ground cumin
  • ½ tsp salt
  • ½ tsp pepper


  • In a mixing bowl, combine 1/4 cup olive oil, 2 tbsp lime juice, 1 tbsp chili powder, 1 tsp garlic powder, 1/2 tsp ground cumin, 1/2 tsp salt, and 1/2 tsp pepper. Whisk or mix well to create the marinade.
  • Place 2 lbs boneless chicken breast in the Ziploc bag with the marinade. Close the bag and ensure that the chicken is evenly coated with the marinade.
  • Refrigerate and let it marinate for at least 30 minutes or up to 4 hours. The longer the chicken marinates, the more flavorful it will become.
  • Preheat your grill to medium-high heat. Make sure the grill grates are clean and lightly oiled to prevent sticking.
  • Remove the chicken from the marinade, allowing any excess marinade to drip off. Discard the remaining marinade.
  • Place the chicken on the preheated grill. Cook for about 6-8 minutes per side, or until the chicken is cooked through and reaches an internal temperature of 165°F. The cooking time may vary depending on the thickness of the chicken breasts.
  • Once cooked, transfer the grilled chicken to a cutting board and let it rest for a few minutes to allow the juices to redistribute.
  • Slice the grilled fajita chicken into thin strips or bite-sized pieces. You can also leave the chicken breasts whole if preferred.
  • Serve the grilled fajita chicken hot, either as a main course or as a filling for tacos, burritos, salads, or any other desired dish. Enjoy!


  • Feel free to adjust the spice level to your liking by increasing or reducing the amount of chili powder. Add additional spices or seasonings to customize the marinade according to your taste preferences.
  • If you don't have access to an outdoor grill, you can use a stovetop grill pan or even bake the marinated chicken in the oven. To use a grill pan, preheat it over medium-high heat and cook the chicken following the same instructions for grilling. For oven baking, preheat the oven to 400°F and place the chicken on a greased baking sheet. Bake for approximately 20-25 minutes or until the chicken reaches an internal temperature of 165°F.
