High Protein Crockpot Buffalo Chicken Soup
Equipment
- 1 Slow cooker
- 1 Cutting Board
- 1 Knife
- 1 immersion blender
- 1 Soup ladle
Ingredients
- 5 Carrots Diced
- 5 Celery Stalks Diced
- 1/2 Cauliflower head Diced
- 1 Packet Ranch seasoning mix
- 32 oz. Low-sodium chicken broth
- 1/3 cup buffalo sauce (I use Frank’s)
- 1.5 lbs. Raw chicken breast
- 8 oz. Reduced fat cream cheese Cut into chunks
Optional toppings:
- shredded colby jack cheese, diced green onions, sour cream
Instructions
- In a large crockpot or slow cooker, add carrots, celery,cauliflower, ranch seasoning, chicken broth, buffalo sauce,and reduced-fat cream cheese
- Give the ingredients a stir until combined. Add chickenbreasts.
- Allow to cook on low for 4 hours.
- Carefully remove chicken breasts and shred using a fork orhand mixer.
- While the chicken is out of the crockpot, use an immersionblender to combine and breakdown the softened veggies.Blend until creamy.
- Place chicken back into crockpot and allow to cook for anadditional 4 hours on low.
- Serve hot with toppings of your choice, enjoy!
