“Egg White Spinach Breakfast Burrito”

Copycat Starbucks Egg White Spinach Feta Wrap
Equipment
- 1 Spoon or spatula
Ingredients
- 1 cup liquid egg whites
- 8 cups baby spinach
- 1/2 cup reduced-fat feta cheese, crumbled
- 2 tbsp whipped cream cheese
- 1 cup sundried tomatoes, chopped
- 4 low carb tortillas I used Mission Carb Balance
- Cooking spray
- Salt & pepper, to taste
Instructions
- Spray a large skillet with cooking spray and cook thespinach and sundried tomatoes over med-high heat for 2-3minutes until spinach and tomatoes are softened. Removefrom pan and set aside.
- In the same skillet, give another quick spay of cookingspray and add egg whites. Season with salt and pepper.Allow the egg whites to form an omlet. Allow eggs to cookthrough. Remove from heat and cut into 4 pieces.
- With your tortilla shell laying flat, spread 1/2 tbsp. ofwhipped cream cheese down the middle (but slightlyfavoring one side or the other). Add spinach and sundriedtomatoes mixture, egg whites, and top with feta cheese.
- Begin to roll into a burrito, tucking in the sides and rollingtightly.
- If desired, sear the burrito in the same skillet over mediumheat for 1-2 minutes. Flip burrito and repeat on theopposite side.
- Cut in half & enjoy!
Notes
burrito in saran wrap, place in a large freezer bag and store
for up to 3 months. When ready to eat, reheat in the
microwave for 2 minutes. If you’d like to increase the protein with your burrito, add in a
couple of turkey or chicken sausage breakfast links or turkey
bacon.





I don’t remove the spinach and sun dried after sautéing. When spinach and tomatoes are softened I add pour egg whites on top of. Then add feta and cook until eggs are set.
