High Protein Cauliflower Pizza Bowls
Equipment
- 1 Large baking sheet
- 1 Parchment paper or siicone baking mat
- 1 Veggie chopper or cutting board + knife
- 1 Large mixing bowl
- Mesuring cups & spoons
Ingredients
- 1 head Cauliflower, cut into small florets
- 1 tbsp. Olive oil
- 1/4 cup Pizza sauce
- 3/4 cup Reduced-fat mozzarella cheese, shredded
- 1 oz. Mini pepperonis
- 1 cup Turkey sausage crumbles
- Salt & pepper, to taste
Instructions
- Preheat your oven to 450°F.
- In a large bowl, combine the cauliflower florets with olive oil, salt, and pepper, ensuring even coating.
- Spread the cauliflower in a single layer on a large baking sheet. Roast in the preheated oven for 15-20 minutes, flipping halfway through, until tender and caramelized.
- Keep the oven on. Arrange four 8-ounce oven-safe ramekins on a baking sheet. Divide the roasted cauliflower evenly among the ramekins, followed by 1 tablespoon of sauce and 2 tablespoons of cheese in each. Layer any desired toppings beneath the cheese, then add 1 tablespoon of mozzarella to each bowl, and top with additional toppings, if desired.
- Return the baking sheet to the oven and bake for 6-8 minutes, or until the cheese is melted and the pizza bowls are heated through. Enjoy!
