“FHM High Protein Waffle Breakfast Sandwich”

High Protein Waffle Breakfast Sandwich
Equipment
- 1 Mixing bowl
- 1 Spoon or spatula for mixing
- 1 Mini Waffle Maker (I have this one from Amazon)
Ingredients
- 1 serving protein pancake mix (I used Clean Simple Eats (code TAMI), but Kodiak Cakes or another brand work great, too)
- 2 slices Canadian bacon (I used the Jones Dairy Farm brand)
- ½ cup liquid egg whites
- 1 tbsp Sugar-free preserves (I used the Polaner brand)
- 1 Light Swiss cheese wedge (I used Laughing Cow)
- Cooking spray
Instructions
- In a small mixing bowl, make protein waffle batter according to package directions.
- Plug in your mini waffle maker and allow griddle to heat up.
- Once griddle is hot, spray with cooking spray and add half of your waffle batter to the griddle. Allow to cook for 2-3 minutes and remove. Repeat with the remaining waffle mix so that you have 2 waffles and set aside.
- Spray griddle with cooking spray and pour liquid egg whites into the waffle maker. Allow to cook for 2-3 minutes, remove waffled egg and set aside.
- Add Canadian bacon slices to the waffle maker and allow to brown for 1-2 minutes. Remove and set aside.
- Spread jam over both waffles. Then spread the cheese wedge overtop of the jam.
- Time to build the sandwich! Add egg white patty and Canadian bacon slices to one side of the waffles. Top with the reaming waffle & enjoy!
