These Meal Prep Jalapeño Popper Breakfast Sandwiches are one of my go-tos for busy weeks when I need something high-protein, satisfying, and actually delicious. They’re creamy, cheesy, just a little spicy, and sturdy enough to keep you full and fueled well into the morning. Bonus: they reheat beautifully, making them perfect for meal prep Sundays (or whenever you meal prep).

Meal Prep Jalapeno Popper Breakfast Sandwiches
Equipment
- 1 9×9 baking dish
- 1 Mixing bowl or measuring glass
- 1 Whisk or fork
- 1 Toaster or toaster oven
- 1 Spatula
- cooking spray
- Almuminum foil
Ingredients
- 6 large Eggs
- 1/2 cup 2% cottage cheese
- 6 tbsp Neufchatel cheese
- 1 Jalapeno, sliced
- 6 tbsp Bacon bits
- 6 English muffins
- 6 Turkey sausage patties (we used Jimmy Deans)
- 6 slices Reduced-fat cheddar cheese
- Salt and pepper, to taste
Instructions
- Preheat the oven to 350 degrees F. Spray a 9×9 pan with cooking spray.
- Measure out eggs in a measuring glass and sprinkle with salt and pepper. Whisk eggs then pour into the pan. Bake for 15-20 minutes or until eggs are done. The middle of the eggs should not jiggle when moved. Let cool for 10 minutes.
- In a large skillet, cook patties on medium heat to warm through. Set patties aside until ready to assemble.
- Cut English muffins in half and toast before assembling. Layer bottom muffin with turkey sausage patty, egg, and cheese. Sprinkle bacon bits on top and jalapeno slices. Spread cream cheese on top half. Top with the other half of the muffin.
- If meal prepping for later, wrap each sandwich individually in tinfoil. When ready to enjoy, remove the tin foil and wrap the sandwich in a paper towel. Place the sandwich on a plate and microwave for 30-60 seconds. You may flip the sandwich and cook for another 30 seconds until the middle is warm.
