Macro Friendly Breakfast Toaster Pocket

Equipment

  • 1 Toaster
  • 1 Small pan
  • 1 Medium pan
  • 1 Serving plate

Ingredients
  

  • 4 Mission Carb Balance tortillas
  • 2 eggs
  • 3 tbsp liquid egg whites
  • ½ cup reduced-fat sharp cheddar cheese
  • 4 slices bacon, low sodium

Instructions
 

  • In a mixing bowl, whisk together the eggs, salt, and pepper until well combined.
  • Heat a small, non-stick skillet over medium heat. Add the egg mixture to the skillet and cook, stirring occasionally, until the eggs are scrambled and cooked through.
  • In a medium skillet over medium heat, cook the bacon to your preferred level.
  • Lay the tortillas flat on a work surface. Sprinkle ¼ of the cheese on the tortilla.
  • Lay 1 piece of bacon on top of the cheese, then spoon the scrambled eggs on the bacon, leaving about a 1/2 inch border around the edges of each tortilla.
  • Fold the sides of each tortilla towards the center, then fold the sides in towards the center, creating a pocket. Press down gently to flatten the tortilla.
  • Place the tortilla pockets in a toaster and cook level 3 for 1-2, or until the tortillas are crispy and the cheese is melted.
  • Carefully remove the pockets from the toaster and allow them to cool for a minute or two before serving. Enjoy!

Notes

  • Be careful not to overstuff the tortillas or they may burst in the toaster.
  • If you don't have a toaster, you can also cook the pockets in a pan on medium-high heat until golden brown and crispy on both sides.
