I love the sweet and tangy taste of BBQ, so I'm always down for BBQ-flavored things like this pizza, but you can easily swap the BBQ sauce for whatever you'd like. I use this base recipe to make all kinds of pizzas – Buffalo chicken, ground turkey and pesto, chicken sausage with marinara…the possibilities are endless!

Equipment

  • 1 Mixing bowl
  • 1 Rolling Pin
  • 1 Large baking sheet or pizza stone
  • 1 parchment paper
  • 1 Measuring cups

Ingredients
  

For the dough:

  • 1 cup Plain Greek yogurt (non-fat or low-fat)
  • 1 cup Self-rising flour Or, regular flour + 1 1/2 tsp baking powder + 1/4 tsp salt

Toppings:

  • 1/2 cup Sugar-free BBQ sauce (I used G. Hughes)
  • 1 cup Shredded part-skim mozzarella cheese
  • 1 cup Cooked chicken breast, diced or shredded
  • 1/4 cup Red onion, thinly sliced
  • 1/4 cup Bell peppers, thinly sliced
  • Fresh cilantro, chopped, optional for garnish

Instructions
 

  • In a mixing bowl, combine Greek yogurt and self-rising flour. Mix until a dough forms, then knead on a floured surface for 2-3 minutes until smooth.
  • Roll the dough into a circle (about 12 inches in diameter) on a sheet of parchment paper. Transfer parchment paper with dough onto a baking sheet or pizza stone.
  • Spread BBQ sauce evenly over the dough, leaving a ½-inch border. Sprinkle shredded mozzarella cheese over the sauce.
  • Distribute the shredded or diced chicken, red onion, and bell peppers evenly over the pizza.
  • Place the pizza in a preheated oven at 425°F (220°C) and bake for 12-15 minutes, or until the cheese is bubbly and the crust is golden.
  • Remove from the oven, sprinkle with fresh cilantro, slice, and serve hot.
