Instructions

  1. Begin by preheating your oven to 425 degrees F. Line a baking sheet with parchment paper and set it aside for later use.

  2. Cut the chicken into bite-sized pieces and set them aside. In a small bowl, whisk together the eggs. In another bowl, combine the Kodiak Cakes mix with garlic powder, salt, and pepper.

  3. Dip each piece of chicken into the beaten egg, then coat it thoroughly in the Kodiak Cakes mixture. Place the coated chicken onto the prepared baking sheet.

  4. Generously spray the coated chicken with nonstick cooking spray.

  5. Bake in the oven for 15-20 minutes, turning the chicken halfway through and spraying it again with cooking spray. Once done, remove the chicken from the oven and set it aside.

  6. While the chicken is baking, melt the butter in a large skillet over medium-high heat. Add the ginger paste, minced garlic, and chili flakes, and cook for 1-2 minutes until fragrant.

  7. Whisk in the vinegar, soy sauce, hoisin sauce, and sugar until the ingredients are well combined.

  8. In a separate bowl, whisk together the water and cornstarch, then add this mixture to the sauce in the skillet. Cook, stirring continuously, until the sauce thickens to the desired consistency.

  9. Toss the cooked chicken in the thickened sauce until evenly coated. Garnish with sesame seeds before serving and enjoy!

Tami’s notes

Feel free to substitute the Kodiak Cakes mix with breadcrumbs or crushed cornflakes for a different texture. Additionally, you can use boneless skinless chicken thighs instead of chicken breast for a juicier result.

This dish pairs well with steamed rice, quinoa, or noodles. For added freshness, serve with a side of steamed vegetables or a crisp green salad. Drizzle any leftover sauce over the side dish for extra flavor.
