  1. Heat the coconut oil in a large soup pot over medium-high heat.

  2. Add the diced onion, bell pepper, and jalapeño. Sauté for about 4 minutes, stirring occasionally, until the vegetables begin to soften.

  3. Add the crushed garlic and cook for another 20–30 seconds, stirring until fragrant.

  4. Pour in the broth and add the undrained chili beans, rinsed and drained pinto beans, drained corn, cumin, chipotle chili powder, onion powder, garlic powder, salt, and black pepper. Stir to combine.

  5. Add the cooked, shredded chicken and bring the mixture to a gentle simmer. Cook for about 5 minutes to allow the flavors to blend.

  6. Reduce the heat to medium-low. Stir in the Greek yogurt and nonfat cream cheese until the cream cheese has melted and everything is thoroughly combined. Avoid boiling the chili after adding the dairy.

  7. Ladle into bowls and top with shredded Mexican cheese and fresh cilantro. Add your favorite optional toppings and enjoy!

Customize the chili with extra jalapeños, additional bell peppers, or other vegetables. You can also add diced potatoes for a heartier meal.
