Macro-Friendly Strawberry Greek Yogurt Bites

- 1 12 tin muffin pan or silicone pan
- 12 Muffin liners
- 1 Mixing bowl
- 1 Spoon
- 1 Fork
Ingredients
- 1/2 cup Granola of choice
- 1 cup Preferred Greek yogurt I usd Oikos Triple Zero Vanilla
- 1/2 cup Strawberries, diced
Instructions
- Line a 12 cup muffin pan with muffin liners or use a silicone baking muffin pan.
- Sprinkle about 2 teaspoons of granola into the bottom of each prepared muffin tin. Set aside.
- In a medium bowl, combine the yogurt and diced strawberries. Mash the strawberries into the yogurt using a fork until mostly mixed, with a few small fruit chunks remaining. Use a rubber spatula or wooden spoon to stir and fold the mixture until well combined.
- Spoon about 2 tablespoons of the strawberry yogurt mixture into each cup, ensuring an even layer. Tap the pan gently to smooth out the layer.
- Press around 1 tablespoon of diced strawberries or a single slice of strawberry into the top of each cup.
- Place the pan into the freezer and let the yogurt bites chill until firm, typically for about 2-4 hours.
- Once frozen, remove each yogurt bite from the pan, allow it to thaw for a few minutes, and then they are ready to be enjoyed.
