“FHM Pumpkin Protein Cookies”

Easy Pumpkin Protein Cookies
Equipment
- 1 Large mixing bowl
- 1 Mixing spoon
- 1 Measuring cups and spoons
Ingredients
- 1 Box Yellow or white cake mix
- 3/4 cup Pumpkin puree
- 1/2 cup Low-fat vanilla Greek yogurt
- 2 Large eggs
- 1 tsp Vanilla extract
- 1 tsp Pumpkin spice seasoning
Instructions
- Preheat your oven to 350°F.
- In a mixing bowl, combine the cake mix, eggs, Greekyogurt, protein powder, and pumpkin spiceseasoning. Use an electric mixer or a whisk to blendeverything together until a soft dough forms.
- Once the dough is well mixed, drop roundedspoonfuls of it onto a baking sheet lined withparchment paper or a silicone baking mat. Space thedough about 2 inches apart to allow for spreadingduring baking.
- Place the baking sheet in the preheated oven andbake for 10 minutes. Keep an eye on the cookies asthey bake and remove them from the oven whenthey turn golden around the edges.
- Carefully transfer the baked cookies to a coolingrack and let them cool completely. They will be softwhen warm but will firm up as they cool.
- Once cooled, the cookies are ready to be enjoyed!Store any leftovers in an airtight container at roomtemperature.
