Equipment

  • 1 Large mixing bowl
  • 1 Large wooden spoon
  • 1 Small Mixing Bowl
  • 1 whisk

Ingredients
  

  • 1 15-ounce can chickpeas drained, rinsed
  • ½ cup red onion, chopped
  • 3 mini Persian cucumbers, chopped
  • 1 cup cherry tomatoes, halved
  • ½ cup crumbled feta, reduced fat
  • ¼ cup Greek dressing
  • Salt and black pepper, to taste

Instructions
 

  • In a large mixing bowl, combine the drained and rinsed chickpeas, chopped red onion, mini Persian cucumbers, and halved cherry tomatoes.
  • Gently toss the ingredients together until well mixed.
  • Add the crumbled feta to the salad and continue tossing to distribute the cheese evenly throughout.
  • Drizzle the Greek dressing over the salad and toss once again to ensure everything is coated in the dressing.
  • Taste the salad and season with salt and black pepper to your preference. Adjust the seasoning as needed.
  • Serve the Mediterranean Chickpea Salad immediately as a colorful and refreshing side dish to complement your main course. Enjoy!

Notes

You can customize the vegetables to your liking by adding bell peppers, kalamata olives, or artichoke hearts. Feel free to adjust the amount of feta cheese based on your taste preferences.
This salad can be made ahead and stored in the refrigerator for up to 2 days. Just remember to toss it again before serving to refresh the flavors.
