Mediterranean Chickpea Salad
Equipment
- 1 Large mixing bowl
- 1 Large wooden spoon
- 1 Small Mixing Bowl
- 1 whisk
Ingredients
- 1 15-ounce can chickpeas drained, rinsed
- ½ cup red onion, chopped
- 3 mini Persian cucumbers, chopped
- 1 cup cherry tomatoes, halved
- ½ cup crumbled feta, reduced fat
- ¼ cup Greek dressing
- Salt and black pepper, to taste
Instructions
- In a large mixing bowl, combine the drained and rinsed chickpeas, chopped red onion, mini Persian cucumbers, and halved cherry tomatoes.
- Gently toss the ingredients together until well mixed.
- Add the crumbled feta to the salad and continue tossing to distribute the cheese evenly throughout.
- Drizzle the Greek dressing over the salad and toss once again to ensure everything is coated in the dressing.
