High Protein Cottage Cheese Queso Dip

This lightened-up, protein-packed version of queso dip will be your new favorite way to enjoy queso!

Equipment

  • 1 High-speed blender
  • 1 Measuring cups

Ingredients
  

  • 16 oz. Low-fat cottage cheese I used Good Culture brand
  • 10 oz. Can Rotel Diced Tomatoes & Green Chilies
  • 1 cup Reduced-fat shredded Mexican cheese
  • Salt and pepper to taste

Instructions
 

  • Add cottage cheese, shredded cheese, and Rotel to a high-speed blender or food processor.
  • Blend on high until smooth and creamy (cottage cheese is fully incorporated)
  • Add salt, pepper, and additional seasoning to taste.
  • Warm dip in microwave for 15 second intervals, stirring in between each interval. When warmed through, enjoy with your favorite dippers!

Notes

You can customize your queso dip by adding any additional spices or swapping out your shredded cheese for another variety. Try adding a packet of taco seasoning for a robust taco dip experience!
This dip can be stored in the refrigerator for up to 3 days in an airtight container.
When reheating, you may experience some separation. Re-heat in intervals, stirring as you go.
