One-Pot Chicken Caesar Pasta (Macro-Friendly!)

Equipment

  • 1 Large pot or dutch oven
  • 1 Mixing spoon
  • Measuring cups and spoons

Ingredients
  

  • 32 oz. Chicken broth
  • 8 oz. Protein angel hair pasta, broken in half I used Barilla Protein Plus
  • 2 cups Chopped or shredded cooked chicken
  • 14 oz. Bag frozen broccoli florets
  • 1/4 tsp. Garlic salt
  • 1/4 tsp. Salt
  • 1/4 tsp. Pepper
  • 1/2 cup Greek yogurt-based Caesar dressing I used Bolthouse Farms
  • 1/4 cup Shredded parmesan cheese

Instructions
 

  • In large Dutch oven, add chicken broth, pasta, chicken,
    broccoli, garlic powder, salt and pepper. Stir until
    combined.
  • Heat to boiling over medium-high heat. Cover & reduce
    heat to medium; cook 8 to 10 minutes, stirring
    occasionally, until most of liquid is absorbed.
  • Stir in Greek yogurt Caesar dressing; cook 1 to 2 minutes
    longer or until heated through. Remove from heat; stir in
    Parmesan cheese. Serve with additional Parmesan cheese,
    if desired. Enjoy!

Notes

Rotisserie chicken works well for this recipe.
