  • 1 Mixing bowl
  • 1 whisk
  • 1 Grill (gas or charcoal)

Ingredients
  

  • 3 lbs Boneless, skinless chicken breast
  • 1 tbsp Olive oil
  • 2 cups Simply Mixology Lime Margarita Mocktail & Mixer Or a similar product from another brand
  • 1 tsp Salt
  • 1 tsp Garlic powder
  • 1/2 tsp Pepper
  • Optional, cilantro, chopped

Instructions
 

  • Place the chicken in a large resealable plastic bag.
  • In a mixing bowl, combine olive oil margarita mix, salt, garlic powder, and pepper, and whisk until well blended.
  • Pour the marinade over the chicken in the bag. Seal the bag, ensuring the chicken is well-coated, and refrigerate for at least 4 hours or overnight for best results.
  • Preheat your grill to medium heat.
  • Remove the chicken from the marinade, discarding any leftover marinade.
  • Grill the chicken for 6-8 minutes per side, or until it is thoroughly cooked and reaches an internal temperature of 165°F.
  • Optional: Top each piece of chicken with chopped cilantro before serving.

Notes

Medium heat is key to avoid burning the marinade sugars while ensuring the chicken cooks through.
This chicken pairs well with a side of grilled vegetables, a light salad, or some warm tortillas for a complete meal.
