Equipment

  • 1 Cooking spoons or spatulas
  • 1 Veggie chopper or cutting board + knife

Ingredients
  

  • 1 tbsp Olive oil
  • 1 lb Lean ground turkey - I used 93/7
  • 1 Small yellow onion, chopped
  • 3 Cloves garlic, minced
  • 1/2 tsp Salt
  • 1/2 tsp Pepper
  • 2 Small celery stalks, chopped
  • 2 Large carrots, chopped
  • 1 Large green bell pepper, chopped
  • 1/2 cup Bone broth Beef or chicken
  • 1 can 15 oz. no salt added tomato sauce
  • 1/2 cup Ketchup
  • 2 tbsp Worcestershire sauce
  • 1 tsp Paprika
  • 1 tbsp Light brown sugar

For serving:

  • 3 cups Roasted sweet potatoes
  • Optional: Pickled red onions, jalapenos

Instructions
 

  • Wash and prepare all produce as described above.
  • In a large stovetop skillet, add 1 tbsp of olive oil over medium heat. Add ground turkey, salt, pepper, and garlic. Allow to cook until no longer pink, about 7-8 minutes. Drain excess liquid.
  • Add celery, carrots, and bell pepper to the skillet and saute until veggies are softened, about 5-8 minutes.
  • Add the bone broth, tomato sauce, ketchup, worcestershire sauce, paprika, and brown sugar to the skillet. Stir to combine. Simmer over medium-low heat, stirring occasionally, for about 15-20 minutes, or until the sauce has thickened.
  • Once the sauce has thickened, divide the sloppy joes into 6 bowls. Add ½ cup sweet potatoes to each bowl. Garnish with pickled red onions and/or jalapenos (optional). Enjoy!

Notes

Serving size is 1/6 of the recipe. To get the most accurate measurement, weigh your entire dish in grams after cooking (less the weight of the container) and divide that number by 6.
