Cottage Cheese Taco Bowl

Equipment

  • 1 Spatula
  • 4 Meal prep containers
  • 1 Measuring cups and spoons

Ingredients
  

  • 1 lb Lean ground beef I used 96/4
  • 1 cup Low fat cottage cheese I used Good Culture
  • 1 packet Low-sodium taco seasoning
  • 8 tbsp. Salsa
  • 1 cup Shredded Mexican Cheese Reduced fat
  • Non-stick cooking spray
  • Optional toppings: more cheese, jalapenos, peppers, onions, avocado, sour cream, shredded lettuce

Instructions
 

  • Heat skillet over medium heat, spray with nonstick cooking spray. Add ground beef, break it up into small pieces and add taco seasoning.
  • Allow ground beef to cook until no longer pink. Set to the side to let cool.
  • In 4 meal prep containers, add ¼ cup low-fat cottage cheese, 2 tbsp. Salsa, and ¼ cup shredded Mexican cheese to each bowl. Add ¼ cooked ground beef to each bowl.
  • If saving for later, place airtight lid on each bowl and store in refrigerator for up to 5 day.
  • When ready to serve, remove from refrigerator, microwave on high for 60-90 seconds, or until cheese is melted and bubbly.
  • Mix everything together, add any additional toppings, and enjoy!

Notes

Serving size = 1/4 recipe
If you do not wish to meal prep all 4 of the bowls fully at once, you can prep the ground beef and place in an airtight container in the refrigerator. Once ready, assemble bowls one at a time by following the same instructions above.
