Heat skillet over medium heat, spray with nonstick cooking spray. Add ground beef, break it up into small pieces and add taco seasoning.
Allow ground beef to cook until no longer pink. Set to the side to let cool.
In 4 meal prep containers, add ¼ cup low-fat cottage cheese, 2 tbsp. Salsa, and ¼ cup shredded Mexican cheese to each bowl. Add ¼ cooked ground beef to each bowl.
If saving for later, place airtight lid on each bowl and store in refrigerator for up to 5 day.
When ready to serve, remove from refrigerator, microwave on high for 60-90 seconds, or until cheese is melted and bubbly.
Mix everything together, add any additional toppings, and enjoy!

Serving size = 1/4 recipeIf you do not wish to meal prep all 4 of the bowls fully at once, you can prep the ground beef and place in an airtight container in the refrigerator.
