Viral Breakfast Protein Biscuits (Sausage, Egg, & Cheese)

I'm not surprised that these breakfast biscuits went viral - they're delicious! I used my favorite breakfast flavor combination to create a version that has become one of my new favorite breakfast meal preps!

Equipment

  • 1 Large mixing bowl
  • 1 whisk
  • Measuring cups and spoons
  • 1 Large baking sheet
  • Parchment paper or cooking spray

Ingredients
  

  • 1 3/4 cups Plain Greek yogurt
  • 4 large Eggs
  • 2 1/2 cups All purpose flour
  • 1/4 cup Ground flaxseed
  • 1 tsp Garlic powder
  • 1 tsp Red pepper flakes
  • 1 tbsp Baking powder
  • 1 tsp Salt
  • 1 cup Diced bell peppers (any color)
  • 1 cup Shredded cheddar cheese
  • 2 cups Cooked turkey sausage crumbles I used Jimmy Deans

Instructions
 

  • Preheat oven to 375°F. Line a baking sheet with parchment paper or lightly coat with cooking spray.
  • In a large mixing bowl, whisk together the Greek yogurt and eggs until smooth.
  • Add flour, ground flaxseed, garlic powder, red pepper flakes, baking powder, and salt. Stir until just combined.
  • Fold in the diced bell peppers, cheddar cheese, and turkey sausage crumbles, mixing until evenly distributed.
  • Use a 2/3 cup scoop to portion the batter onto the prepared baking sheet, spacing evenly.
  • Bake for ~20 minutes, or until the biscuits are golden brown and firm to the touch.
  • Let cool slightly before serving.

Notes

Store leftovers in an airtight container in the fridge for up to 4 days. Reheat in the microwave or toaster oven.
For extra protein, serve with a side of scrambled egg whites
You can swap turkey sausage for lean chicken sausage or cooked turkey bacon for variety.
