Mexican shredded cheese

Instructions
Preheat oven to 375 degrees Fahrenheit and spray 8x8 baking dish with cooking spray.
Over medium heat, spray large skillet with cooking spray, add turkey sausage, break up with a spatula, and allow to cook until no longer pink. Drain.
In a large mixing bowl, add ground turkey, egg whites, Rotel, shredded cheese, cottage cheese, salt, and pepper. Stir until well combined.
Pour ingredients into prepared baking dish. Place in oven and bake for 35-40 minutes, or until egg whites are starting to brown.
Run a knife around the baking dish to loosen and lift out. Slice into 6 even pieces.
Store in an airtight container in the refrigerator for 3-5 days. To reheat, simply microwave for 30-60 seconds. Enjoy!
