Equipment

  • 1 Large mixing bowl
  • 1 whisk
  • 1 8x8 baking dish

Ingredients
  

  • 16 oz. Breakfast turkey sausage I used Jennie O's
  • 16 oz. Liquid egg whites
  • 1 28 oz. can Rotel
  • 2/3 cup Mexican shredded cheese
  • 1/2 cup Low-fat cottage cheese I used Good Culture
  • Cooking spray
  • Salt to taste
  • Pepper to taste

Instructions
 

  • Preheat oven to 375 degrees Fahrenheit and spray 8x8 baking dish with cooking spray.
  • Over medium heat, spray large skillet with cooking spray, add turkey sausage, break up with a spatula, and allow to cook until no longer pink. Drain.
  • In a large mixing bowl, add ground turkey, egg whites, Rotel, shredded cheese, cottage cheese, salt, and pepper. Stir until well combined.
  • Pour ingredients into prepared baking dish. Place in oven and bake for 35-40 minutes, or until egg whites are starting to brown.
  • Run a knife around the baking dish to loosen and lift out. Slice into 6 even pieces.
  • Store in an airtight container in the refrigerator for 3-5 days. To reheat, simply microwave for 30-60 seconds. Enjoy!
