Equipment

  • 1 Wooden spoon
  • 1 Large bowl
  • 1 whisk
  • 1 Serving pitcher

Ingredients
  

  • 3 cups 1% milk, divided
  • 1 Vanilla bean
  • 2 large Eggs
  • 1/3 cup Sugar
  • 1 tsp Cornstarch
  • Freshly ground nutmeg, for garnish
  • Optional; spiced rum or bourbon

Instructions
 

  • Warm 2 1/2 cups of milk in a medium-sized saucepan over medium heat.
  • Split the vanilla bean lengthwise, scrape out the seeds, and add both the seeds and pod to the saucepan. Let simmer.
  • In a large bowl, whisk together eggs, sugar, and cornstarch until smooth.
  • Slowly add the hot milk mixture into the egg mixture, about 1 cup at a time, whisking continuously to temper the eggs.
  • Pour the combined mixture back into the saucepan.
  • Stir consistently with a wooden spoon over medium heat until the eggnog starts to thicken, about 5 minutes.
  • Remove the pan from heat and stir in the remaining 1/2 cup of milk to stop the cooking process.
  • Discard the vanilla pod, allow the mixture to cool, and transfer to a pitcher. Chill in the refrigerator until ready to serve.
  • Optionally, add spiced rum or bourbon to taste and garnish with freshly grated nutmeg before serving.

Notes

For a sweeter eggnog, adjust the sugar quantity to your taste.
When tempering the eggs, add the hot milk gradually while whisking continuously to avoid curdling and achieve a smooth consistency.
