Warm 2 1/2 cups of milk in a medium-sized saucepan over medium heat.
Split the vanilla bean lengthwise, scrape out the seeds, and add both the seeds and pod to the saucepan. Let simmer.
In a large bowl, whisk together eggs, sugar, and cornstarch until smooth.
Slowly add the hot milk mixture into the egg mixture, about 1 cup at a time, whisking continuously to temper the eggs.
Pour the combined mixture back into the saucepan.
Stir consistently with a wooden spoon over medium heat until the eggnog starts to thicken, about 5 minutes.
Remove the pan from heat and stir in the remaining 1/2 cup of milk to stop the cooking process.
Discard the vanilla pod, allow the mixture to cool, and transfer to a pitcher. Chill in the refrigerator until ready to serve.
Optionally, add spiced rum or bourbon to taste and garnish with freshly grated nutmeg before serving.
