In a large skillet, heat the olive oil over medium heat. Add the diced onion and bell pepper and sauté for 3-4 minutes until softened.
Add the ground turkey to the skillet, breaking it up with a spoon. Season with salt, pepper, garlic powder, and paprika. Cook until the turkey is browned and no longer pink, about 5-7 minutes.
Stir in the canned sloppy joe sauce and bring to a simmer. Cook for 3-4 minutes, allowing the flavors to meld. Remove from heat.
Transfer the sloppy joe mixture to a 9x13-inch baking dish, spreading it evenly.
Sprinkle the shredded reduced-fat Colby Jack cheese evenly over the top of the sloppy joe mixture.
Separate the Pillsbury Grands Biscuits and cut each biscuit into quarters. Arrange the biscuit pieces on top of the cheese layer in a single layer.
Bake in the preheated oven for 12-15 minutes, or until the biscuits are golden brown and cooked through.
Remove from the oven and let it cool for a few minutes before serving. Enjoy!
