Lightened Up Coleslaw

This delightful twist on a classic favorite uses a combo of light mayo and creamy Greek yogurt, resulting in a lighter and healthier version without compromising on flavor. Ingredients
  

  • ¼ cup plain, non-fat, Greek yogurt
  • ¼ cup light mayo
  • 1 tbsp dijon mustard
  • 1 tbsp white vinegar
  • 1 bag pre-chopped coleslaw mix
  • Salt and pepper, to taste

Instructions
 

  • In a large mixing bowl, combine the Greek yogurt, mayo, Dijon mustard, white vinegar, salt, and pepper. Whisk until well blended and smooth.
  • Add the pre-bagged coleslaw mix to the bowl. Toss the coleslaw mix with the dressing until it is evenly coated. Use a spoon or tongs to ensure all the vegetables are well coated.
  • Allow the coleslaw to sit in the refrigerator for at least 30 minutes to allow the flavors to meld together and the vegetables to soften slightly.
  • Give the coleslaw a final toss before serving to redistribute the dressing.
  • Serve the Lightened Up Coleslaw as a refreshing side dish alongside grilled meats, sandwiches, or as a topping for tacos. Enjoy!
