Ingredients
  

  • 8 slices Chocolate chip brioche bread
  • 8 tbsp Liquid egg whites
  • 1/2 cup Pumpkin puree
  • 1 cup Corepower Elite vanilla protein shake
  • 1 tsp Ground pumpkin pie seasoning
  • 1 tsp Vanilla extract
  • Cooking spray
  • Optional: maple syrup and/or powdered sugar for serving

Instructions
 

  • In a large mixing bowl, whisk together the eggs, pumpkin puree, milk, protein powder, cinnamon, nutmeg, and vanilla extract until smooth and well combined.
  • Heat a non-stick skillet or griddle over medium heat and lightly spray with cooking spray.
  • Dip each slice of brioche bread into the pumpkin mixture, ensuring both sides are well coated. Allow any excess to drip off.
  • Place the coated bread slices onto the hot skillet and cook for 2-3 minutes on each side, or until golden brown and cooked through.
  • Repeat with remaining slices, adding more cooking spray to the skillet as needed.
  • Serve the French toast warm, topped with maple syrup, powdered sugar, or any desired toppings.

Notes

If chocolate chip brioche bread is unavailable, substitute with regular brioche or another sweet bread, and add a handful of chocolate chips to the batter.
If you have any leftover French toast, store it in an airtight container in the refrigerator. Reheat in a toaster or oven for a quick and delicious breakfast the next day.
