Equipment

  • 1 baking sheet
  • 1 Spatula or spoon for cooking the ground turkey
  • 1 Can opener, if needed, for the refried beans
  • Serving plates or platters

Ingredients
  

  • Cooking spray
  • 1 lb. lean ground turkey
  • 1 packet taco seasoning
  • 1 16 oz. can refried beans
  • 1 cup reduced fat shredded Mexican cheese
  • 8 corn tortillas
  • Option: pico, avocado, guacamole, salsa, sour cream, cilantro, etc.

Instructions
 

  • Preheat your oven to 400°F and lightly coat a baking sheet with cooking spray.
  • In a large skillet over medium heat, cook the ground turkey until it is browned and cooked through. Break it up into small crumbles using a spatula or spoon as it cooks.
  • Once the turkey is cooked, add the taco seasoning packet and stir well to coat the meat evenly. Cook for an additional 2-3 minutes to allow the flavors to meld together.
  • Remove the skillet from the heat and set it aside. Next, warm the refried beans in a separate saucepan over low heat, stirring occasionally, until they are heated through.
  • Warm the tortillas in the microwave with a wet paper towel for approximately 20 seconds.
  • To assemble the tacos, take a corn tortilla and spread approximately 2 tablespoons of refried beans evenly across the center. Top with a spoonful of the seasoned ground turkey and sprinkle some shredded Mexican cheese on top.
  • Fold the tortilla in half, creating a taco shape, and place it on the prepared baking sheet. Repeat this process with the remaining tortillas, arranging them side by side on the baking sheet.
  • Lightly spray the tops of the tacos with cooking spray. This will help them achieve a golden, crispy texture when baked.
  • Transfer the baking sheet to the preheated oven and bake for about 12-15 minutes, or until the tacos are crispy and the cheese has melted and started to bubble.
  • Once baked, carefully remove the tacos from the oven and let them cool slightly before serving. Optionally, garnish with your favorite toppings such as diced tomatoes, chopped cilantro, or a dollop of sour cream.
  • Serve these crispy baked tacos warm as a satisfying meal or a delightful snack. Enjoy!
