Equipment

Ingredients
  

  • 1 cup liquid egg whites
  • 8 cups baby spinach
  • 1/2 cup reduced-fat feta cheese, crumbled
  • 2 tbsp whipped cream cheese
  • 1 cup sundried tomatoes, chopped
  • 4 low carb tortillas I used Mission Carb Balance
  • Cooking spray
  • Salt & pepper, to taste

Instructions
 

  • Spray a large skillet with cooking spray and cook the
    spinach and sundried tomatoes over med-high heat for 2-3
    minutes until spinach and tomatoes are softened. Remove
    from pan and set aside.
  • In the same skillet, give another quick spay of cooking
    spray and add egg whites. Season with salt and pepper.
    Allow the egg whites to form an omlet. Allow eggs to cook
    through. Remove from heat and cut into 4 pieces.
  • With your tortilla shell laying flat, spread 1/2 tbsp. of
    whipped cream cheese down the middle (but slightly
    favoring one side or the other). Add spinach and sundried
    tomatoes mixture, egg whites, and top with feta cheese.
  • Begin to roll into a burrito, tucking in the sides and rolling
    tightly.
  • If desired, sear the burrito in the same skillet over medium
    heat for 1-2 minutes. Flip burrito and repeat on the
    opposite side.
  • Cut in half & enjoy!

Notes

If planning to use these for meal prep, wrap each individual
burrito in saran wrap, place in a large freezer bag and store
for up to 3 months. When ready to eat, reheat in the
microwave for 2 minutes.
If you’d like to increase the protein with your burrito, add in a
couple of turkey or chicken sausage breakfast links or turkey
bacon.
