In a large bowl, combine the peanut butter, maple syrup, vanilla extract, oat flour, and ½ cup of mini dark chocolate chips until mixed well.
In a bowl, melt your chocolate chips and coconut oil. Microwave the chocolate in short intervals (about 15-20 seconds). Stir after each interval until smooth. Careful to not burn the chocolate.
Form the cookie dough mixture into 1-inch balls. You may use a cookie scooper to form balls more easily. Dip each ball in the melted chocolate to coat. Use a fork to help toss the ball in the chocolate.
Place the chocolate covered bites onto a parchment paper-lined plate or pan. Refrigerate for at least 2 hours to let them set. You can also place the bites in the freezer for about 30 minutes. Enjoy!
