Chop a medium apple into bite-sized pieces.
In a small saucepan over medium heat, add chopped apples, sugar-free maple syrup, and cinnamon to the pan.
Allow apple mixture to cook for 5-10 minutes, or until apples have softened and are fragrant.
While the apples are cooking, mix Greek yogurt and protein powder together in a bowl until well combined.
Begin to assemble the parfait: begin with half of the yogurt mixture in the bottom of your dish, followed by a layer of apples and granola.
Add the remaining yogurt, then layer the remaining apples and granola on top.
