White Chocolate Blueberry Protein Muffins

All the goodness of a fresh blueberry muffin but packed with protein and notes of silky smooth white chocolate. These protein blueberry muffins have less than 100 calories per muffin and make the perfect snack or breakfast complement.

Ingredients
  

  • 2 scoops vanilla protein powder I used 1st Phorm Level-1
  • tsp baking powder
  • ¼ tsp salt
  • ½ tsp cinnamon
  • ½ cup egg whites
  • ½ cup plain Greek yogurt
  • cup unsweetened applesauce
  • 1 tsp vanilla extract
  • 2 tbsp lite maple syrup
  • ¾ cup blueberries
  • ¼ cup white chocolate chips

Instructions
 

  • Preheat oven to 375.
  • In large mixing bowl combine all wet ingredients.
  • Add all dry ingredients to the wet ingredients and stir until well combined.
  • Fold in blueberries and white chocolate chips, stirring gently to avoid breaking the blueberries.
  • Scoop by tablespoon into greased muffin tin and bake for 13-15 minutes.
  • Remove from the oven, allow to cool, and enjoy!

Notes

If your batter is runny, add more flour or protein powder to bulk it up a bit and avoid soggy muffins.
