Instructions

  1. Cook the pasta according to the package directions. Drain and rinse with cold water. Transfer to a large bowl and set aside.

  2. While the pasta is cooking, season the chicken with herbs, garlic powder, salt, and pepper. Heat 1 teaspoon of olive oil in a grill pan or skillet over medium-high heat. Sear the chicken breasts until browned on both sides and cooked through, about 6 minutes per side. Remove from the pan and let it rest.

  3. In the same pan or skillet, add the remaining olive oil. Sauté the garlic and red onion until the garlic is fragrant, about 1 minute. Turn off the heat.

  4. Add the tomatoes to the pan and toss lightly to warm them through and combine the flavors. Pour the tomato mixture over the pasta.

  5. Mix in the vinegar, Parmesan cheese, and basil or parsley. Season with salt and pepper to taste. Slice the chicken and add it to the pasta.

  6. Toss all the ingredients together until well combined. Serve immediately and enjoy!
