unsweetened almond milk (or milk of choice)

scoop
chocolate protein powder
(I used Clean Simple Eats Brownie Batter (code TAMI) but I also love 1st Phorm Level-1)

xantham gum (thickening agent)

peppermint extract

crushed chocolate mint cookies
(I used Back to Nature plant-based snacks, but any variety will do!)

mini chocolate chips

sugar-free chocolate syrup
(I used Hersey’s, but there are lots of options)
Instructions
Add 10-12 ice cubes to your blender cup, then add unsweetened almond milk, protein powder, xantham gum, and peppermint extract.
Place the lid on the blender cup and give it a shake.
Blend the contents of the cup for about 30 seconds, or until completely smooth.
Remove the lid and scrape the chocolate mint protein shake into a bowl or cup (note: the mixture should be very thick and creamy!)
Top with crushed mint cookies, mini chocolate chips, and a drizzle of sugar-free chocolate syrup.
Enjoy!
Notes
Peppermint extract can be overpowering if too much is added - be mindful of your pour.
